Clostridium perfringens Bacteria and Food Illness

Clostridium perfringens is one of the most common causes of food-borne illnesses and the CDC estimate that 1 million illnesses are caused by these food poisoning bacteria [1]. C. perfringens can be found in raw meat and poultry, animal intestines, and the environment and the symptoms associated with consumption of contaminated food are diarrhea and stomach cramps and usually appear 6 to 24 hours after consumption[1]. This type of food poisoning leaves you in pain and dehydrated, and as long as fluids are restored the condition should be tolerable.
